Easy Banana Bread Muffins

I somehow manage to always end up with three overly ripe bananas. They get to the point where they're too mushy to eat but not bad enough to throw out. Solution- banana bread! I'm lazy and hate having to cut a slice when I'm rushing to class so solution part 2- banana bread muffins! I threw these together in 15 minutes and they baked for 3o minutes. Easy enough to be done during a study break and there's no added sugar which makes it a great snack. Ingredients

  • 3 ripe bananas
  • 1 cup whole wheat flour
  • 1/2 cup vanilla Greek Yogurt
  • 1/3 cup vegetable oil
  • 1 tsp baking powder
  • 2 tsp cinnamon powder
  • dash of salt
  • 4 oz dark chocolate (cut into chunks of your preference)
  • 1 tsp vanilla
  • 2 eggs

  1. Prep your muffin tin with paper & preheat oven to 350 degrees Fahrenheit
  2. Peel and add bananas to bowl, use a fork to smash them
  3. Add flour, yogurt, oil, eggs to bananas then combine the rest of your ingredients
  4. Use a large whisk to mix everything together t
  5. Pour batter into muffin tin
  6. Bake for 30 minutes

Remove from oven and enjoy banana-chocolatey goodness!
